Vegan pancakes recipe

Who says you can't enjoy pancakes on a vegan diet? With this easy recipe, you can make delicious and fluffy pancakes without any animal products. Follow these five simple steps to create the perfect breakfast treat that's both vegan and satisfying.

Gather your ingredients.

Before you start making your vegan pancakes, make sure you have all the necessary ingredients. You'll need flour, baking powder, salt, sugar, non-dairy milk, vinegar or lemon juice and vanilla essence. You can also add in any additional ingredients you like, such as choc-chips or fruit. Make sure all your ingredients are measured out and ready to go before you start cooking.

Mix dry ingredients in one bowl and wet ingredients in another.

 The first step to making fluffy vegan pancakes is to mix your dry ingredients in one bowl and your wet ingredients in another. In your dry ingredients bowl, combine 2 cups of flour, 2 tablespoons of baking powder, 1 teaspoon of salt, and 4 tablespoons of sugar. In your wet ingredients bowl, mix 2 cups of non-dairy milk, 2 tablespoon of lemon juice or vinegar, and 2 teaspoons of vanilla essence. Whisk both bowls until they are well combined.

Combine the wet and dry ingredients.

Once you have mixed your dry and wet ingredients separately, it’s time to combine them. Slowly pour the wet ingredients into the dry ingredients bowl, whisking as you go. Be careful not to overmix the batter, as this can lead to tough and dense pancakes. Mix until the batter is just combined and there are no large lumps. Let the batter sit for 10 minutes to thicken up.

Heat a non-stick pan and pour batter onto the pan.

Heat a non-stick pan over medium heat. Once the pan is hot, use a ladle or measuring cup to pour the batter onto the pan. Use about 1/4 cup of batter for each pancake. Cook the pancakes for 2-3 minutes on each side, or until they are golden brown and fluffy. You may need to adjust the heat as you go to prevent burning. Serve the pancakes hot with your favorite toppings, such as maple syrup, fresh fruit, or vegan whipped cream. Enjoy!

Flip the pancake when bubbles form on the surface and cook until golden brown.

One of the most important steps in making fluffy vegan pancakes is knowing when to flip them. Once you see bubbles forming on the surface of the pancake, it's time to flip it over. Use a spatula to gently lift the pancake and flip it over. Cook for another minute or two, until the other side is golden brown and fluffy. Repeat with the remaining batter, adding more oil to the pan as needed. With these simple steps, you'll have delicious and fluffy vegan pancakes in no time!

Recipe- Makes approximately 5 large or 10 small pancakes

Dry Ingredients:

- 2 cups of plain flour

- 4 tablespoons of sugar

- 2 tablespoons of baking powder

- 1 tsp of salt

Wet Ingredients:

- 2 cups of soy milk

- 2 tablespoons of lemon juice or vinegar

- 2 teaspoons of vanilla essence

How to make yummy vegan pancakes:

  1. Whisk 2 cups of plain flour, 4 tablespoons of sugar, 2 tablespoons of baking powder and 1 tsp of salt in a large bowl. *Optional*- add a handful of choc chips for choc chip pancakes
  2. Mix 2 cups of soy milk, 2 tablespoons of lemon juice or vinegar, and 2 teaspoons of vanilla essence in a separate bowl or jug.
  3. Slowly pour the wet ingredients into the dry ingredients bowl, whisking as you go. Be careful not to over mix the batter, as this can lead to tough and dense pancakes. Mix until the batter is just combined and there are no large lumps. Let the batter sit for 10 minutes to thicken up.
  4. Heat a non-stick pan over medium heat and spray with oil. Once the pan is hot, use a ladle or measuring cup to pour the batter onto the pan. Use about 1/4 cup of batter for each pancake. If you prefer large pancakes, then use 1/2 cup of batter.
  5. Once you see bubbles forming on the surface of the pancake, it's time to flip it over. Use a spatula to gently lift the pancake and flip it over. Cook for another minute or two, until the other side is golden brown and fluffy. Repeat with the remaining batter, adding more oil to the pan as needed. 

We served our pancakes with vegan whipped cream, berries, maple syrup and a dusting of Velicious matcha powder on top. Served with a side of Velicious Hot Chocolate.
